Easy 15 Minute Refreshing Summer Salad Watermelon Recipe

This watermelon salad recipe is the best summer salad, and it’s the perfect fruit salad for days when you just don’t feel like cooking and want something cool and refreshing. Ending your work day with this delicious, light, and flavorful watermelon salad, chock full of nutrient dense ingredients, like blueberries and cucumbers, will help you relax, wind down, and get a good nights sleep!

This summer salad watermelon recipe is the perfect way to incorporate the fruits of the season. It only takes minutes to make, and it is very refreshing and healthy.

I incorporated blueberries into this salad because when I went blueberry picking here on the Cape, I had a plethora of fresh, juicy, ripe berries.

I had never been blueberry picking before so it was quite an adventure. We went to the Blueberry Farm early because I knew it was going to be a hot day. Everyone there was so pleasant, from the parking attendants and helpers who handed you baskets and gave you suggested picking spots, to the cashiers who rang up all of your pickings.

And there were a TON of blueberries to pick from. This farm opens and closes for just a few hours at a time, to make sure they do not get over picked, and so they can give the blueberries a chance to ripen.

It only took me 30 minutes to pick all of the blueberries my guy and I needed. And now I have plenty of ideas on how to use these berries, one being for the best watermelon salad, this summer salad watermelon recipe – WITH blueberries. 😉

Recipe Tips

This recipe is pretty straight forward but if I had to give you one recommendation, that would be to definitely chill this summer watermelon salad in the fridge for a good amount of time, to make it wonderfully cold.

There is nothing like a cold and hydrating fruit salad during the summer when you are cold and sweaty!

Notes About The Recipe

  • Feel free to add a different berry if you prefer, such as raspberries, blackberries, or strawberries.
  • Play with the ratios of fruit according to your taste. As an example, you may like more red onion or mint – or less – let your taste buds be your guide.
  • You can also add some feta cheese to this watermelon salad recipe, if you do in fact eat dairy.

Watermelon is such a delicious and hydrating fruit. Did you know that 92% of watermelon consists of water? This fruit totally lives up to its name. And watermelon has more lycopene than any other fresh fruit or vegetable.

Lycopene is an antioxidant, and watermelon is unique in that it has a readily available source of lycopene called cis-isomeric lycopene. Antioxidants help to fight disease, and the consumption of watermelon has been shown to be effective in reducing cancer, heart disease, diabetes, and age related eye conditions, such as macular degeneration.

Blueberries are also rich in antioxidants, vitamins, and fiber. These nutrient dense berries have a lot going on for their tiny size.

Blueberries are high in vitamin C, which helps keep our immune system strong, as well as they are high in vitamin K, which helps our blood to clot.

Blueberries also contain soluble fiber, which helps to reduce cholesterol and heart disease.

  • large glass mixing bowl
  • silicone spatula
  • measuring spoons
  • measuring cups

Summer Salad Watermelon Recipe Ingredients

  • 1/4 whole watermelon, rind removed and cut into bite size pieces
  • 1 cucumber, peeled and diced into small bite size pieces
  • 2 cups washed blueberries
  • 1/2 red onion, diced
  • 1/3 cup fresh chopped mint
  • 1-2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 tsp lemon zest
  • pinch sea salt
  • pinch cracked red pepper (optional)

optional ingredients you may want to consider

  • feta cheese – if you do in fact eat dairy.
  • basil – swap out the fresh mint for fresh basil. This also tastes delicious.

Summer Salad Watermelon Recipe Preparation

There really isn’t much preparation for this summer salad watermelon recipe. Just make sure to wash your fruit thoroughly, and have a sharp knife on hand for chopping and dicing.

Summer Salad Watermelon Recipe Directions

Wash the outside of the watermelon, and then remove its rind. Cut watermelon into bite size pieces, and place in a large glass mixing bowl.

Wash the outside of the cucumber, peel if desired, and dice into bite sized pieces. Place in the large glass mixing bowl with watermelon.

Wash blueberries, and place in mixing bowl with other fruit.

Dice red onion, and place in mixing bowl with other fruit.

Wash and chop fresh mint, and place into mixing bowl with other fruit.

Gently stir all of the fruit and herbs in mixing bowl until combined thoroughly.

Add olive oil, lemon juice, lemon zest, sea salt, and cracked red pepper to the fruit bowl. Stir to combine well.

Place summer salad watermelon in the fridge to chill, and for flavors to blend together.

Serve and ENJOY!

How To Store

This nutrient dense, watermelon salad will last in the fridge for about 4-5 days or so, depending on where you live and your humidity level.

Make sure to store your fruit salad in a glass dish, with a secure top, that seals properly. Then you will be good to go!

Ingredients

  • 1/4 whole watermelon rind removed and cut into bite size pieces

Instructions

  • Wash the outside of the watermelon, and then remove its rind. Cut watermelon into bite size pieces, and place in a large glass mixing bowl.

  • Gently stir all of the fruit and herbs in mixing bowl until combined thoroughly.
  • Add olive oil, lemon juice, lemon zest, sea salt, and cracked red pepper to the fruit bowl. Stir to combine well.
  • Place summer salad watermelon in the fridge to chill, and for flavors to blend together.
  • Serve and ENJOY!
